Tuesday
Meal: Ground Beef Stuffed Hot House Peppers
Description: Meat. A hot house pepper is halved and filled with seasoned 73% lean ground beef, onion, and rice, then baked until the pepper is tender and the filling is cooked through. No cheese is used to keep this meal strictly meat.

Description: Dairy-free (Meat category avoided; this is a fish/pareve meal). A coho salmon fillet is pan-seared in olive oil until golden and flaky, served with lightly sauteed green beans.

Prep time: 25 minutes
Serving note: Use 1/2 lb coho salmon fillet and about 1 cup green beans (from the 1-package bag, reserving the rest for another use). Sear salmon 4 minutes per side; saute beans in olive oil with garlic.

Meal: Grilled Hebrew National Beef Franks with Sweet Corn
Description: Meat. Two Hebrew National beef franks are grilled until snappy and lightly charred, paired with a sweet grilled ear of corn brushed with olive oil.
