Serving note: Use 1 lb pork loin (about $1.79), cut into 6 medallions, with 1 cup uncooked rice (cook all of it and save half for Thursday), 1 tbsp butter, 2 tomatoes (about 0.75 lb) and 1/4 red onion for the salad.

Tuesday
Meal: Chicken Breast Quesadillas with Avocado and Cheese
Description: Sliced chicken breast and melty shredded cheese are folded into crisp flour tortillas. Served with sliced avocado and a little red onion on the side for two.

Prep time: 25 minutes
Serving note: Use 0.75 lb chicken breast, 4 tortillas, 1.5 cups shredded cheese, 3 mini avocados and 1/4 red onion. Save the remaining avocados for the Friday plate if desired.

Wednesday
Meal: Beef Meatball Gnocchi Bake in Passata
Description: Frozen-style meatballs and gnocchi are tossed in seasoned passata, topped with cheese and baked until bubbly. A hearty, cozy dish with enough for two generous plates.

Prep time: 45 minutes
