Description: Meat. Bone-in chicken thighs are browned in olive oil, then finished in the skillet with halved creamer potatoes and baby carrots until crisp-skinned and tender. Serves 2 with leftover potatoes for another use.

Prep time: 40 minutes
Serving note: Use 1.25 lb chicken thighs (about 4 thighs), 1 lb creamer potatoes (about a third of the 3 lb bag), and 1/2 lb baby carrots (half of a 1 lb bag). Season with salt, pepper, garlic powder, and paprika. Use olive oil only, no butter.

Tuesday
Meal: Beef and Pepper Skillet over Ready Rice
Description: Meat. Thin strips of sirloin are seared in olive oil with multicolor peppers and onion, then served over warmed Ready Rice. A quick weeknight skillet for 2.

Prep time: 25 minutes
Serving note: Use 3/4 lb sirloin, 2 peppers from the 3 ct. pack, 1/2 onion, and 1 pouch Ready Rice (about 2 servings). Season with soy sauce (kosher), garlic powder, and pepper. No dairy.
Wednesday
Meal: Pan-Seared Chicken Breast with Roasted Tomatoes and Carrots
Description: Meat. Chicken breasts are seared in olive oil until golden and cooked through, served beside oven-roasted tomatoes and carrots. Roasting concentrates the tomato flavor for a simple, lighter dinner for 2.
Sale items used: Chicken Breasts, Angel Sweet Tomatoes, Baby-Cut Carrots
Prep time: 35 minutes
Serving note: Use 1 lb chicken breasts (2 breasts), 1 container (1.5 lb) tomatoes, and the remaining 1/2 lb carrots from Monday. Use the second half of a 1 lb bag if needed. Roast at 425F for 25 minutes with olive oil, salt, and dried oregano. Use olive oil only, no butter.

Thursday
Meal: Vegetable Frittata with Peppers and Onions
Description: Dairy. Eggs are whisked and poured over sauteed peppers and onions, then baked until set and golden. Light enough for 2, with leftovers for lunch.

Prep time: 30 minutes
Serving note: Use 6 eggs (half a dozen), the remaining pepper from the 3 ct. pack, and 1/2 onion. Cook in olive oil in an oven-safe skillet, bake at 375F for 12 to 15 minutes. Serve with the leftover creamer potatoes if desired.

Friday
Meal: Slow-Roasted Round Roast with Onions and Carrots
Description: Meat. A small round roast is seared, then slow-roasted with onions and carrots in broth until fork-tender. Makes dinner for 2 plus leftovers for sandwiches.

Prep time: 3 hours 15 minutes
Serving note: Use a 2 lb round roast (about 1/2 lb per person served, plus leftovers), 2 onions, and 1 lb baby carrots. Roast covered at 300F for about 2.5 to 3 hours with chicken or beef broth. Start by 2:30 PM for a 6 PM dinner; the roast can be cooked a day ahead and gently reheated in its juices.
