Serving note: Use about 0.75 lb chicken thighs (2 thighs), 6 oz creamer potatoes (about 5 small), and 1 cup baby carrots (about 4 oz). Use olive oil only, no butter. Leftover potatoes and carrots keep for other meals this week.

Tuesday
Meal: Beef and Pepper Skillet over Ready Rice
Description: Meat. Quickly browned lean ground beef is sauteed with sliced multicolor peppers and onion in olive oil and seasoned with salt, pepper, and paprika. It is served over a warmed pouch of ready rice.

Prep time: 25 minutes
Serving note: Use 0.5 lb ground beef (assumed from a 3 lb package, freeze the rest in portions for later), 1 pepper, 1/4 onion, and 1 pouch of rice. Drain excess fat before adding vegetables. No dairy.
Wednesday
Meal: Pan-Seared Chicken Breast with Roasted Tomatoes and Carrots
Description: Meat. One chicken breast is seared in olive oil until golden and cooked through, served alongside oven-roasted tomatoes and baby carrots. Pan juices with a splash of chicken broth make a light sauce.

Friday
Meal: Slow-Roasted Round Roast with Onions and Carrots
Description: Meat. A small round roast is seasoned and slowly roasted on a bed of sliced onions and carrots until tender. The pan juices make a simple gravy.

Prep time: 150 minutes
Serving note: Use a 1 lb round roast (the smallest practical size, leftovers slice well for sandwiches), 1 onion, and 1 cup baby carrots. Roast at 300F for about 2 hours. Season the roast ahead and let it rest in the fridge in the morning, so evening prep is only about 15 minutes. No dairy.
