5-DAY MEAL PLAN

Monday
Meal: Skillet Chicken Breast with Roasted Sweet Potatoes
Description: Meat. A seared boneless chicken breast is cooked in olive oil in a skillet and served alongside cubed sweet potato roasted until caramelized. Simple, filling, and made with no dairy.
Sale items used: Boneless Chicken Breast, Bagged Sweet Potatoes
Prep time: 40 minutes
Serving note: Use 1 chicken breast (about 0.5 lb) and 1 medium sweet potato (about 8 oz). Buy 1.5 lbs of chicken in total for the week (Monday and Thursday, with a little spare) and freeze what you won't use in the first days. Roast the cubed sweet potato at 425F for 25 minutes with olive oil, salt, and pepper while you sear the chicken 6 minutes per side.

Sale items used: Russet Potatoes, Galbani Ricotta Cheese, Food Club Shredded Cheese
Prep time: 70 minutes
Serving note: Use 1 large russet (about 10 oz), 1/2 cup ricotta (about 4 oz), and 1/4 cup shredded cheese. Total time is about 70 minutes, so bake the potato in advance (up to a day ahead) and reheat in the oven for 10 minutes before topping and broiling 3 minutes.

Sale items used: Bottom Round Roast, Firecracker Brussels Sprouts
Prep time: 75 minutes
Serving note: Assume a 1 lb roast (about 4 oz eaten tonight, the rest saved for sandwiches or leftovers) and 0.25 lb Brussels sprouts. Roast at 325F for about 60 minutes to 135F inside, rest 10 minutes, and add the sprouts to the oven for the last 25 minutes at a higher 400F after the roast comes out. Season the roast ahead in the morning to save time.

Prep time: 35 minutes
Serving note: Use 1 chicken breast (about 0.5 lb) cut into strips, 1 medium russet (about 8 oz), and 3/4 cup broth from the 32 oz carton. Simmer potato wedges in the broth for 15 to 20 minutes until the liquid reduces, then sear the strips 4 minutes per side.
