Prep time: 55 minutes
Serving note: Use about 0.75 lb of chicken thighs (2 thighs), 1 russet potato cut in chunks, and about 1 cup baby carrots. Roast at 425F for 40-45 minutes, brushing with about 2 tbsp BBQ sauce in the last 10 minutes. Buy 1.5 lb of thighs total and save the rest (about 0.75 lb) for a later meal if desired.

Tuesday
Meal: Skillet Pork Loin Chops with Caramelized Onions and Peppers
Description: One bone-in pork loin chop is seared in a hot skillet, then topped with slowly caramelized onions and sweet peppers. A simple, hearty one-pan dinner.
