Monday

Prep time: 30 minutes
Serving note: Use 1 lb of pork chops (about 2 chops, 0.5 lb per person) at $2.59/lb. Use about 4 medium potatoes from the 10 lb bag for mash (the rest are used Tuesday). Use 1 can of Green Giant vegetables (corn or green beans). Season chops with salt and pepper and cook 4 to 5 minutes per side.

Prep time: 40 minutes
Serving note: Use 1 package of tilapia (assume about 3 fillets; cook 2 to 3 for the two of you). Cut 3 medium potatoes into wedges, toss with oil, salt and paprika, and bake at 425 F for 30 minutes. Add the fish for the last 12 to 15 minutes. Thaw the fish in the fridge the night before.
Wednesday
Meal: Skillet Ground Chuck Tacos
Description: Ground chuck is browned in a skillet with mild taco seasoning and spooned into crunchy taco shells. Kids can top their own tacos for a fun, hands-on dinner.
